Just wondering. what stats increase with age and when? Likewise, which ones decrease past a certain age? There must be one if not all out of the "physical" stats (str, dex, con).
As for dex - taking AD&D rules into account (however relevant they are here) - does it effect chances to hit ( to-hit bonus and THACO as per AD&D rules) instead of strength (which is the case for AD&D type RPG games like Baldur's Gate 1&2 (not positive about Dragonlance but it is likely the same) on the market, computer and paper) in arctic? I've somehow gotten the impression over the years of noticing how higher dex characters typically hit more often overall rather than missing.
Okay, on a side note, how likely is rolling a 25-28 stat (be it any)? Which races are capable of scoring one?

Another thing, how much can
Another thing, how much can a class - ignore chosing a primary stat for a sec - increase the potential of scoring a high stat?
Unfortunately for you, most
Unfortunately for you, most of this information is unavailable to people unless they test for it themselves. I will tell you that it is currently impossible to roll a 25-28 stat without age bonuses . . .

Since this is in the help
Since this is in the help files anyways, I will tell you that the single most important factor for your ability potential is race. If you want to look more into how primary stats work and how they interact with race and guild, I would recommend just playing with one ability at a time, and testing it out on a few combinations. If you know a good place to roll and can keep a few hundred coins on you, you should be able to get a better idea of how the system works, on the abstract, within 30 minutes or so. Once you have this abstract knowledge, you should have a good idea of exactly what combinations you want to try for whatever class you want to roll.
As for your more specific classes, AD&D rules are a good place to start, but I think your power of observations have been serving you well enough, so go with what your gut says regarding dex.
As for age bonuses, I don't think we're allowed to tell you specifically what goes up and down when, because they aren't the same for every race.
